The Halibut is the largest of flatfishes and has a thick, but
narrow, elongated body. Halibut typically range from about 30
to 300 pounds, in fact, they can get so large they have earned the
nickname "barn doors" due to their size and shape. Halibut, who also go by Hippoglossus stenolepis (translates as "hippo of the sea") is a fin fish that is a member of the flounder family. Fresh halibut meat is sparkling white and firm. It is a lean, mild tasting fish whose firm meat holds together well. Halibut cheeks are more tender in texture. February through September are the best
